Lemon Sour Cherry Tart (Hardisty family recipe)
This lemon tart was such a success at a recent garden visit that we have had to relent and publish its previously secret recipe here, with many thanks to the Hardisty family from Victoria.
Ingredients:
350 g sour cherries, pitted, halved (sweet cherries also work if you haven't got sour ones)
3 eggs, whisked lightly
1 cup caster sugar
half a cup plain flour
125 g unsalted butter, melted, cooled slightly
300 g sour cream
1 tbsp lemon rind, grated
half a cup lemon juice
Method:
Preheat oven to 180 degrees C (fan forced)
Mix dry ingredients.
Mix wet ingredients, adding the slightly cooled butter last
Add wet to dry, mix, pour into quiche dish or the like
Arrange cherries on top of mixture, they will sink in a bit.
Bake at 180 degrees C for 40 minutes.
Cool, and then place in fridge for at least 2 hours.
Dust with icing sugar to serve.
