Visit Otago Bay Laura and Frank 2022

Visit Otago Bay Laura and Frank 2022

We visited Laura and Frank in 2018, a couple of years after they bought their property. It was high time for a re-visit and on a Sunday morning, with rain threatening, a happy group of gardeners gathered in Otago Bay for an enjoyable morning.

A lot of Laura and Frank's plans for a productive garden have come to pass, some are still a work in progress and some have been abandoned.

Recipe Preserving Olives (2)

Recipe Preserving Olives (2) (many thanks to Laura, who shared this recipe)

Here is another recipe for preserving olives. Laura was inspired by her large olive harvest in 2019 and Val's recipe to start experimenting until she found a variation of Val's that worked really well for her. Here is her super simple method that yields an olive that is so tasty, a local Italian friend reckons it reminds him of being home in Italy!

Preserving Olives

Preserving Olives

(with many thanks to Val, who provided this recipe)

For everyone with an olive tree, wondering how to preserve them: here we finally have our first olive preserving recipe!

I am keen to give it a go this autumn. Let us know how you went, and if you have an age-old family recipe, please do send it in, we'd love to try them all!
