Spicy Sweet Potato Loaf (many thanks to Linda for sharing her recipe)
At a recent food garden visit people were very impressed by Linda's Sweet Potato Loaf. She kindly agreed to share her recipe, so here goes:
Ingredients:
- Sweet potatoes (or rich coloured pumpkin) – around 600-700 grams (also try substituting rich pumpkins for the sweet potato, prepared the same way)
- 100 grams butter
- 1 packed cup brown sugar
- 2 eggs at room temperature
- 1 cup plain flour
- ½ tsp bicarb soda
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground cloves
Method:
- Bake unpeeled sweet potatoes whole in 180°C oven until soft or cut into large chunks if too big. About 30 minutes should do it.
- Remove and discard skin and scrape out soft flesh. Mash well. You will need 1 packed cup (around 350+ gms)
- Cream butter and sugar.
- Add eggs and beat well.
- Add 1 generous cup (I usually make it 1 ¼ cups) well mashed sweet potato or pumpkin and mix in.
- Sift in bicarb soda and flour and stir.
- Mix in all spices.
- If mixture is too heavy add a very small amount of fresh orange juice.
- Spoon the mixture into a greased lined loaf tin.
- Bake in a 180°C oven for around 40-50 mins or until a bamboo spike comes out dry.
- Cool.
- When cold, slice thickly and either butter and serve or else wrap individual slices in glad wrap and freeze in a sealed container.
