Recipe Strawberry and Rhubarb jam

 Recipe Strawberry and Rhubarb Jam (with many thanks to Jill for sharing her recipe)


Ingredients:

  • 250 g strawberries, hulled, washed and sliced 
  • 250 g rhubarb, trimmed, washed and cut into small pieces 
  • 2 ¼ cups sugar 
  • juice and rind of a small lemon (optional)

Method:

  • Put all fruit into a non-metallic bowl. 
  • Cover with half of the sugar. 
  • Add juice and rind of a small lemon. (optional)
  • Leave to stand overnight.
  • Next day, transfer fruit to a saucepan and boil to reduce water content.
  • Then add remaining 1 1/8 cup sugar. 
  • Bring to boil slowly then boil briskly. 
  • Stir occasionally, until setting point then put into sterilised jars.

It makes only a couple of jars but very tasty.
