Recipe Strawberry and Rhubarb Jam (with many thanks to Jill for sharing her recipe)
Ingredients:
- 250 g strawberries, hulled, washed and sliced
- 250 g rhubarb, trimmed, washed and cut into small pieces
- 2 ¼ cups sugar
- juice and rind of a small lemon (optional)
Method:
- Put all fruit into a non-metallic bowl.
- Cover with half of the sugar.
- Add juice and rind of a small lemon. (optional)
- Leave to stand overnight.
- Next day, transfer fruit to a saucepan and boil to reduce water content.
- Then add remaining 1 1/8 cup sugar.
- Bring to boil slowly then boil briskly.
- Stir occasionally, until setting point then put into sterilised jars.
It makes only a couple of jars but very tasty.
