Recipe Lemon Curd

 Lemon Curd - Microwave (with thanks to Jill for sharing her recipe)

For everyone who loves lemon curd, here is a very easy recipe, made in your microwave!


Ingredients:

2 eggs
100 g (half a cup) caster sugar
85 g unsalted butter, melted, cooled
160 ml (2/3 cup) fresh lemon juice
2 teaspoons finely grated lemon rind

Method:

  • Whisk the eggs, sugar, butter, lemon juice and lemon rind in a large microwave-safe glass bowl until combined.
  • Microwave on medium, stirring every minute, for 4 to 6 minutes or until a smooth, thick curd forms.
  • Pass through a strainer.
  • Set aside to cool completely
  • Can be frozen.
