Love apricot jam, but not making it? Try this easy method in your microwave! Jill has found it also works with other fruits.
Prep time: 10 min, Cook time: 28 min, Yields 4 cups.
Ingredients:
- 4 cups apricots (750g)
- 3 1/2 cups sugar( 750g)
- 3 tablespoon lemon juice
- Put the apricots and lemon juice in a large bowl.
- Cook, covered with pierced plastic wrap for 15 minutes on high, stirring frequently.
- Add the sugar, stirring well.
- Cook covered on high for 10 minutes, stirring every 5 minutes.
- Put a spoonful of jam on a cold plate to test for wrinkling.
- If jam is still liquid, cook for a further 2-3 minutes on high.
- Pour into hot sterilized jars, cover and seal.
