Recipe Apricot Jam - Microwave

Apricot Jam - Microwave (with thanks to Jill for sharing her recipe)

Love apricot jam, but not making it? Try this easy method in your microwave! Jill has found it also works with other fruits.

Prep time: 10 min, Cook time: 28 min, Yields 4 cups.

Ingredients:

  • 4 cups apricots (750g)
  • 3 1/2 cups sugar( 750g) 
  • 3 tablespoon lemon juice

Method:

  • Put the apricots and lemon juice in a large bowl.
  • Cook, covered with pierced plastic wrap for 15 minutes on high, stirring frequently.
  • Add the sugar, stirring well.
  • Cook covered on high for 10 minutes, stirring every 5 minutes.
  • Put a spoonful of jam on a cold plate to test for wrinkling.
  • If jam is still liquid, cook for a further 2-3 minutes on high. 
  • Pour into hot sterilized jars, cover and seal.
