Home made stem ginger is easy to make and so much nicer than shop bought. It can be used in many recipes and would also make a lovely Christmas gift!
Ingredients:
- 300 grams fresh ginger
- 2 kg white sugar
- 1.5 litres of water
- 2 tablespoons citric acid
Method:
- Peel the ginger and cut into 2 cm cubes.
- Dissolve the sugar in the water on a medium stove.
- Add the ginger cubes and simmer very softly for 45 minutes without a lid.
- Remove from heat, put the lid on and leave for 24 hours.
- Add the citric acid and stir well.
- Ladle into clean jars.
- Keep in a dark, cool cupboard.
