Stem Ginger in syrup

Recipe Stem Ginger in Syrup (with thanks to Loes for sharing her recipe)

Home made stem ginger is easy to make and so much nicer than shop bought. It can be used in many recipes and would also make a lovely Christmas gift!

Ingredients:

  • 300 grams fresh ginger
  • 2 kg white sugar
  • 1.5 litres of water
  • 2 tablespoons citric acid


Method:

  • Peel the ginger and cut into 2 cm cubes.
  • Dissolve the sugar in the water on a medium stove.
  • Add the ginger cubes and simmer very softly for 45 minutes without a lid.
  • Remove from heat, put the lid on and leave for 24 hours.
  • Add the citric acid and stir well.
  • Ladle into clean jars.
  • Keep in a dark, cool cupboard.
