Recipe Limoncello

Limoncello recipe (with kind thanks to Ross and Elizabeth who shared this recipe)

Here is another recipe in our series of liqueurs. This traditional Italian palate cleanser is a favourite of Roscoe's who, after many experiments, decided that this recipe gives the best results.



Ingredients:

  • 9 organic lemons (this is a must)
  • 1 litre 95% pure alcohol (you can use pure vodka, which contains 40% alcohol but it won't taste the same, since it is the alcohol that extracts the volatiles from the lemons) In Australia, 95% alcohol is difficult to find. Try www.nicks.com.au, they sell "Spirytus Rektyfikowany"  from Poland. A 500 ml bottle costs $70.
  • 1.5 litres of water
  • 700 grams white sugar

Utensils:

  • 1 strainer
  • 1 big jar with a properly sealing lid
  • 1 saucepan
  • pretty glass bottles, enough for 3 litres in total

Method:

  • Peel 9 organic lemons. Make sure you only peel the skin without getting the white part of the lemon.
  • Place the skins in the big jar and add the alcohol so the skins are covered.
  • Seal the jar and let it infuse for 20 days. The lemons need to soak for this long in order for the limoncello to be bold yellow in colour and full of flavour.
  • Bring 1.5 litres of water to the boil and add 700 grams of sugar, stir until dissolved. Cool.
  • When the sugared water is cool, add the marinated yellow alcohol, using a strainer so the skins do not go into the limoncello.
  • Put the skins back into the jar with a glass of water, stir and strain this water into your limoncello as well. This way, you will get the most flavour out of the lemon skins for the limoncello to be full of bold flavour.
  • Now mix the limoncello really well for a couple of minutes.
  • Fill up empty glass bottles with limoncello.
  • Put one bottle in the fridge and store the rest in a dry cool place.

This recipe should make about 3 litres of limoncello.

How to serve:
Serve the Limoncello in small glasses. Some Italians enjoy drinking it in a cold glass. To do this place the glass in the freezer for about 20 minutes before pouring the limoncello.
